A Beef Share is your chance to reserve a guaranteed share of one of our 100% Grass-Finished cows raised on regenerative land practices.

You place a deposit for the size share that fits your family and receive your beef after our big harvest in September (beef is ready in mid to late September).

We only sell as many shares as we are absolutely sure we can fulfill.

So once you place your deposit, you can rest easy knowing that your beef supply will be ready to ship.

It's Sustainable

When you place a deposit to reserve a share of the herd, you are helping create the most sustainable beef buying system there is. Your deposit allows us to develop responsible plans for the summer herd, and implement truly regenerative grazing practices. You are also working with mother nature, as your beef will only be finished during the peak growing season. This system is the most direct ranch-to-consumer system possible and also saves a ton on freezer storage since we ship everything out before winter comes.  ALSO, in this world of unpredictable supply chains, the less middlemen the better.

Since you are helping us plan our herd ahead of time, we can get amazing rates on shipping, and offer that to you for free! Shipping is not like it was 10 years ago. We use 100% recycled shipping materials, and the infrastructure makes it more environmentally friendly. And of course, if you're in East Texas, you can come meet us and pick up in person!

When you get your beef from Fire & Salt, you get to know your rancher. Hobbs’ mission is to also share our practices through his videos on TikTok and Instagram as a way to educate you and answer questions.

Vacuum-sealed beef will stay fresh in your freezer for one year. Side note: we've eaten beef that's been frozen slightly longer than a year and it's still delicious.

  • A rule of thumb is 30 to 35 LBS of beef needs 1 cubic foot of storage. 
  • You want to make sure you have the freezer space to hold your beef. Since your beef won't be ready until mid September, you will have plenty of time to find the right size freezer. This is essential so your beef can stay frozen.
  • 1/8 Beef Share: requires approx. 1.5 - 2.0 cubic ft. of freezer space. This will fit in a regular fridge-freezer compartment. It will take about half the space, which will leave room for other goods. No big freezer needed.
  • 1/4 Beef Share: requires approx. 3.5 - 4.0 cubic ft. of freezer space. This will fit in a small chest/upright freezer.
  • 1/2 Beef Share: requires approx. 6-8 cubic ft. of freezer space. This will fit in a large chest/upright freezer.
  • Whole Beef: requires approx. 14 - 16 cubic ft. of freezer space. This will fit in a large chest/upright freezer.

You get to choose which share you need to feed your family.

We offer 4 standard sizes: 

Each share is slightly different, but on average, you can expect 60-65% assorted beef cuts and 35-40% ground beef.

Every cow is a little different so we may have to make substitutions with a cut of equal or greater value. We always make sure every single share is at least the stated weight.

We get our beef processed at Panola County Processing in Carthage, TX. They are a USDA inspected facility that does an incredible job.

We have a custom cut sheet that we use with the butcher and customers love it. Let us take the burden of 50 decisions off your shoulders with our custom cut sheet.

Yes! USDA Quality assurance and food safety are important to us too.

  • All of our assorted cuts and free extras arrive frozen and wrapped in individually vacuum sealed packages for the freshest flavor. Ground beef is wrapped in 2 lb tube packaging. 
  • We have an awesome USDA Inspected butcher - Panola County Processing, their packaging and processing is second to none!

Your beef will be dry-aged for 14 days to increase tenderness and flavor. We have found this to be the optimal time for our grass-finished beef. It's worth the wait!

Our Practices

All beef animals are raised on pasture during the growth phase, regardless of where it’s finished…

But not all cattle are finished on pastured forage.

Grocery store beef typically spends the last 3+ months of its life standing in a feedlot… 

Eating a diet of at least 70% grain out of a concrete feed bunk. 

It's unnatural.

Our 100% grass-finished animal is finished completely on pasture during peak growing season when the grass is high in nutritional value. 

The difference is night and day.

That means when you shop beef through Fire & Salt you'll taste the benefits of:

    Bulk beef is harvested at the PEAKS of the year, when the forage is at its nutritious.

Our philosophy is to work with mother nature first, produce beef second. We select cattle that work with mother nature and require less human intervention with a focus on natural growth

We select Corriente cows because this breed is packed with more nutrients and a rich, savory flavor that you just can't find in mass-produced beef.

Here are some of the true value and beauty of these animals... 

  1. FEWER INPUTS THAN CONVENTIONAL CATTLE

    Resilient cattle require less special treatment to stay healthy and fertile.

    This means fewer poisons, antibiotics, and supplemental feed.


  2. GREAT FLAVOR FOR MOMENTS TO SAVOR

    Heritage breeds are known to pack more flavor than conventional beef breeds.

    This is one of the reasons foodies tend to enjoy heritage, grass-finished beef more than your standard grocery store beef.

  3. MORE NUTRIENTS THAN GROCERY STORE BEEF

    This is so cool. Did you know that an 800 lb cow can eat ~16% more per lb of body weight than a 1,600 lb cow?

    That means 16% more nutrients in every bite of grass, and 16% more nutrients FOR YOU in every bite of our delicious beef!

    It also means they can consume more dormant grass in the winter and can therefore access 16% more nutrition than the conventional large-frame cow.

    That means less hay and less protein supplement!


  4. EFFICIENT LAND-FIXERS

    Corriente are known to eat a wider variety of plants, including forage on the ground, shrubs, and even trees!

    Degraded land overrun by bushes and weeds can be managed by Corriente cows.

    They turn the undesirable plants into fertilizer and their hooves encourage aeration in the soil and germination of desirable seeds in the soil.

Ranching isn't the same all year...

There is a growing season where the grass is green...

And a dormant season where the grass is no longer growing.

When the grass stops growing, it no longer has the same amount of protein, energy, minerals, or vitamins in it.

These levels change, often quite drastically, from month to month.

Keeping our animals healthy means making up for deficiencies with proteins, vitamins, and minerals (much like humans).

And because the grass in East Texas is lower in nutritional value during the winter compared to cooler regions…

The cattle need to be supplemented with some additional proteins called cattle cubes (also known as 'cake').

Most people feed hay for up to 120 days during the winter…

But we have determined our carbon footprint is lower feeding protein supplement and dormant grass. 

(Not to mention it’s better for the pasture, too!)

Our cattle will eat around a pound of cattle cubes per day just a few months during the dormant season…

(For perspective, our cattle eat 25-30 pounds of grass per day.)

These cubes contain a small percentage of grain by-product… 

But without this, the animals would suffer in body condition.

Side note: Sometimes due to supply and demand, we purchase butcher animals locally…

These cattle are also raised on Texas pastures.

Then, they are finished on 100% pastured forage where the only thing we provide is free choice mineral. 

Our cows are not finished on grain.

We slaughter during peak growing season when the grass is high in nutritional value after at least 5-6 months on extremely high quality forage.

Our animals eat a variety of forage that includes San Augustine grass, Bahia, Coastal Bermuda, Vetch (legume), Annual Rye Grass, Clover...

And summer cover crops such as Sorghum Sudan, Pearl Millet, and more! (This is the secret sauce to our signature flavor, btw...)

We select these grasses based on the higher protein and energy content it provides, which means more nutrients per bite for the animal and more nutrients per bite for you.

It’s really simple! One key difference between grocery store beef and grass-fed or grass-finished beef is how much quicker it cooks and the ideal finishing temperatures. Our grass-finished beef is ideal at rare to medium-rare temperatures. If you prefer meat well done, cook at a low temperature in a sauce to add moisture. A slow cooker can be ideal as well. 

As long as you have a thermometer, after your first time cooking our grass-finished beef, you’ll have no problem cooking your grass-finished beef.

According to the American Grassfed Association (AGA), grass-fed beef will cook 30% faster than grain-fed beef.

We never give antibiotics to our bulk beef animals.

YES. All our beef is 100% naturally raised and hormone-free.

Never. In fact, our entire grazing practice is created to improve the land through cattle, without these inputs!

We like to say we are Beyond Organic! We are not currently certified organic. That said, we have always managed our pastures and animals in a way that is aligned with organic standards, and in fact go way beyond organic standards.

Payment

  • Eighth Beef Share deposit is $297.
  • Quarter Beef Share deposit is $537.
  • Half Beef Share deposit is $997.
  • Whole beef Share deposit is $1,817.

When your animal share is reserved, it’s yours. We put your name on the share of the animal reserved. The deposit is non-refundable because we use that deposit to plan our herd sustainably and coordinate dates with our USDA processing butcher. Then we coordinate the shipping dates with our shipping partner, Periship. There’s a lot of planning involved with different entities. Your deposit is essential to get all the pieces involved to deliver a premium, high-quality product!

Beef has a shelf life and it’s essential we deliver your beef shortly after processing to give all our customers up to a year to cook and enjoy their beef. If someone decides to not complete the second payment of their beef share, we are under pressure to find a new customer as soon as possible to assure they have plenty of time to enjoy their beef. If we are unable to find another customer, we risk losing the beef. We love and respect our cattle too much, and are thankful for each one. We are not prepared to see any of these animals wasted.

We accept checks, cash, credit cards, debit cards, Paypal, Shop Pay, and Amazon Pay.

We don’t know exactly how much the second and final payment will be until the butcher sends us hanging weights. When we send out a reminder confirmation e-mail 1-2 weeks prior to your shipping day, this email will also include the final payment amount for your share.

We ask that you pay the balance due prior to your shipping date or upon pick-up (if you choose to pick up directly at our ranch). We will not ship your beef until we receive final payment.

Given the involved process of getting your beef ready, refunds will be warranted on a case by case basis. We do want every customer to be happy. Which is why we offer a happiness guarantee. We stand by our products 100% no matter what. If you have a problem, we will solve it. Just reach out to our team. We’ll make it right.

Shipping

We ship with an insulated box liner and frozen gel packs to keep your beef frozen. Your beef will arrive frozen, no matter where you live.

Yes, we can ship a whole beef! It will arrive in multiple boxes that weigh around 50 lbs each.  

Depending on the temperatures, we will include frozen gel packs when shipping your beef. We work with a company called Periship who specializes in shipping perishable items across the country to ensure your beef will arrive frozen!

No signature is required for delivery. Your box will always be packed with frozen gel packs in case you can't unbox it right away.

Bulk beef fulfillment will begin in mid to late September and last for 1-2 months. The first orders in will be the first orders out.

We will message you when your beef is ready and send you your final payment invoice before shipping. There are no surprises.
